Potato’s

About a year ago I noticed a few pounds of potatoes were starting to look a little rough and I was tired of throwing potatoes out. I started by washing them then I sliced them into pieces. I used my dicing box (using the bigger dicing insert) I washed and cut the potatoes in sliced, then I diced them.

 

 

 

 

 

 

This is very easy to do. The reason I do it is to get the potato to a size that will cook fairly easy.

 

From the chop box to the water bath to remove the starch. I don’t leave the diced potatoes in the water very long.

 

 

I drain them and put little olive oil, coarse salt and pepper on them. I put them on a cookie sheet on parchment paper.

 

 

 

 

 

 

 

I baked them at 425. I check them every 15 minutes until their done. That varies by how many pounds you cook at one time. I currently cook five pounds and it takes about 45 minutes.
When cooked they are very good, I usually snack when they come out of the oven.
Like almost everything I freeze they go on another cookie sheet covered with parchment paper overnight. Then into regular containers.

Nothing is difficult about this process. It does take some time to cook them, but I usually multitask when I decided to cook them. I timed my last batch of five pounds, to prep took about 15 minutes cooking took about 45 minutes. I only stirred them up a couple of times.
As I indicated I did this initially to extend the life of the potato. The kids love them when I warm them up on the stove, I add little olive oil and a little salt. They have become a staple in our quick meal options.
