Storing Tomato Base Leftovers

I started cooking late in life; one of the issues I ran into was leftover storage. I bought the full complement of the usual containers. The problem that I noticed was when I put tomato-based or acidic foods in some containers they turned color. I believe the acid in the food reacted with the container. I just acknowledged that I would have to buy new plastic containers a couple of times a year.

I was trying different options for diced onions when I figured out that a mason jar did the best job of containing the onion fragrance. Then it dawned on me that the simple Mason jar would work for storing acidic food.

The best part of this is that the jars are inexpensive. I do replace the tops now and then, but again these are cheap as well.
