12 different chicken recipes….Step 3
We always have chicken in the freezer; we buy it in quantity when it is on sale.
When I ask what the family would like for dinner and chicken is identified, I get to determine the recipe in most cases. I pull it from the freezer and start the thawing process.
At that point I determine how much I am into cooking that day. We have at least a dozen different chicken recipes. Some recipes are very easy and others that have quite a few steps.
1. BBQ chicken, on the plate or a bun
2. A Spanish style that is simply cumin and salt.
3. Chipotle-style chicken, (I use a marinade that I make in bulk and freeze in meal size portions).
4. Curried chicken. The recipes call for sliced onions. I dice the onions in the chop box, because it is easier than slicing.
5. Chicken and dumplings.
6. Pulled chicken, I use the crock pots
7. Chicken Chili
8. Chicken Enchiladas
9. Thai Chicken
10. Orange Chicken
11. Chicken Salad
12. Spice Rub
Many of these chicken recipes offer different flavors using the same primary ingredient. I do the same thing for beef, pork and fish
Periodically I see a chicken recipe that looks interesting and I will try it. If the family likes it I will add it to my list. The next time I make it I try to figure out how to simplify it by making the seasoning in bulk.
Seldom does anyone in the family complain that they eat the same thing all the time because while it may be chicken, it is seasoned differently and generally the side dishes are different as well.
